All around, the pasture farms keep the dairy tradition alive: this is where the fourme de Châtel and abondance, the valley’s AOP cheese, are made from the milk of Abondance cows. The market and the dairies (fruitières) let you taste and buy direct from the producer. At the table, don’t miss the berthoud, the emblematic melted-cheese dish of the Chablais.
